OVEN FRIED CHICKEN

MONDAY 

 

CREAMED TUNA AND NOODLES

TUESDAY 

Ingredients

1 pouch (6.4 oz.) or 2 pouches (2.6 oz.) or 2 cans (5 oz.) StarKist® Chunk Light Tuna or Albacore Tuna in Water1 cup frozen peas½ cup milk¾ cup butter crackers, crushed4 oz. (about 2- ½ cups) egg noodles1 can (10.75 oz.) Cream of Mushroom soup¼ tsp. garlic powder1/4 tsp. dried thyme (optional)

Directions

Preheat oven to 375°F.Cook noodles according to package instructions, adding peas during the last 2 minutes of cooking; drain in colander.In a separate bowl, mix together soup, milk and garlic powder. Stir in noodles, peas, tuna and thyme. Transfer to a 1-½ quart casserole. Bake 15 minutes; top with cracker crumbs. Continue baking 5 – 10 minutes or until heated through.

 

Light Tuna or Albacore Tuna in Water 1 cup frozen peas½ cup milk¾ cup butter crackers, crushed4 oz. (about 2- ½ cups) egg noodles1 can (10.75 oz.) Cream of Mushroom soup¼ tsp. garlic powder1/4 tsp. dried thyme (optional)through.

Tips: To reduce the fat and sodium content use low fat/sodium soup. 

INGREDIENTS

1/2 cup nonfat buttermilk,)1 tablespoon Dijon mustard2 cloves garlic, minced1 teaspoon hot sauce 2 1/2-3 pounds whole chicken legs, skin removed, trimmed and cut into thighs and drumsticks or your favorite chicken parts- 1/2 cup whole-wheat flour2 tablespoons sesame seeds 1 1/2 teaspoons paprika 1 teaspoon dried thyme 1 teaspoon baking powder1/8 teaspoon salt Freshly ground pepper, to taste Olive oil cooking spray. 

DIRECTIONS

  1. Whisk buttermilk, mustard, garlic and hot sauce in a shallow glass dish until well blended. Add chicken and turn to coat. Cover and marinate in the refrigerator for at least 30 minutes or for up to 8 hours.

  2. Preheat oven to 425°F. Line a baking sheet with foil. Set a wire rack on the baking sheet and coat it with cooking spray.

  3. Whisk flour, sesame seeds, paprika, thyme, baking powder, salt and pepper in a small bowl. Place the flour mixture in a paper bag or large sealable plastic bag. Shaking off excess marinade, place one or two pieces of chicken at a time in the bag and shake to coat. Shake off excess flour and place the chicken on the prepared rack. (Discard any leftover flour mixture and marinade.) Spray the chicken pieces with cooking spray.

  4. Bake the chicken until golden brown and no longer pink in the center, 40 to 50 minutes.

TIPS & NOTES- Make Ahead Marinate the chicken for up to 8 hours.

  •  No buttermilk? You can use buttermilk powder prepared according to package directions. Or make “sour milk” mix 1 tablespoon lemon juice or vinegar to 1 cup milk.

TACO SALAD

WEDNESDAY 

INGREDIENTS  

  • 4 (10-in.) burrito size flour tortillas

  • 4 cups shredded lettuce leaves

  • 1 package Knorr® Fiesta Sides™ - Spanish Rice, cooked according to package directions

  • 1 can (15 oz.) black beans, drained and rinsed

  • 1 can (15 oz.) whole kernel corn, drained

  • 1 cup shredded cheddar cheese

  • DIRECTIONS

  • Press 1 tortilla into a 4-cup microwave-safe bowl to form bowl shape. Microwave at HIGH 1-1/2 minutes. Let cool 1 minute. Gently lift out and arrange on serving plate. Repeat with remaining tortillas.

  • In saucepan used to cook Spanish Rice, combine rice, black beans and corn; heat through.

  • In tortilla bowls, evenly arrange lettuce. Evenly top with rice mixture, then sprinkle with cheese. Top, if desired, with your favorite taco toppings such as chopped tomato, chopped avocado, salsa, sour cream and/or chopped fresh cilantro.

Great Easy Beef Stew

Thursday

Ingredients

pound beef stew meat, cut into 1/2-inch pieces

1

medium onion, cut into eighths

1

bag (8 oz) baby-cut carrots (about 30)

1

can (14.5 oz) diced tomatoes, undrained

1

can (10.5 oz) condensed beef broth

1

can (8 oz) tomato sauce

1/3

cup all-purpose flour

1

tablespoon Worcestershire sauce

1

teaspoon salt

1

teaspoon sugar

1

teaspoon dried marjoram leaves

1/4

teaspoon pepper

small red potatoes (1 1/2 lb), cut into fourths

2

cups sliced fresh mushrooms (about 5 oz) or 1 package (3.4 oz) fresh shiitake mushrooms, sliced Very Easy to Cook.

 

 

Heat oven to 325°F.


In ovenproof 4-quart Dutch oven, mix all ingredients except potatoes and mushrooms. Cover and bake 2 hours, stirring once.until beef and vegetables are tender.

 

 

 

 

INGREDIENTS

  • 1 lb lump crabmeat, picked through and any bits of shell removed (try not to break up the lumps of crabmeat as you pick through it)

  • 1/2 stick (1/4 cup) unsalted butter (divided, 1 Tbsp and 3 Tbsp)

  • 1/2 cup chopped shallots

  • 1 teaspoon kosher salt

  • 2 large eggs

  • 1 1/2 teaspoons Worcestershire sauce

  • 1 teaspoon of sweet paprika

  • 1/2 teaspoon freshly ground black pepper

  • 2 Tbsp prepared tartar sauce

  • 1 teaspoon lemon zest

  • 1/4 teaspoon Tabasco

  • 2 Tbsp chopped fresh parsley

  • About 4 slices white bread, crusts removed, torn into small pieces, yielding 2 cups

  • 2/3 cup fresh bread crumbs

Directions

 Heat one tablespoon of butter in a small skillet over medium high heat. Add the shallots and a half teaspoon of salt. Cook until the shallots are translucent, a couple minutes. Do not brown. Let the shallots cool.

 Whisk together the eggs, Worcestershire sauce, remaining half teaspoon of salt, paprika, freshly ground black pepper, tartar sauce, lemon zest, Tabasco, parsley, and the cooked shallots. Gently fold in the crabmeat and torn bread, taking care again to not break up the lumps of crab meat. The mixture will be very wet. Using your (clean) hands, take a scoop of the crab mixture and gently form it into a patty form about 2 1/4 inches across and 3/4 inches thick. Continue until you've made 12 crab cake patties. Line a rimmed tray with a piece of wax paper just large enough to hold the cakes and sprinkle the bottom of the tray with half of the bread crumbs. Set the crab cakes in one layer on the top of the layer of bread crumbs and sprinkle them with the remaining bread crumbs. Cover the crab cakes loosely with another sheet of wax paper and chill in the refrigerator for at least one hour.

Strawberry Cheese Cake

INGREDIENTS

1 tub Knorr® Homestyle Stock - Chicken, divided2 Tbsp. chopped fresh herbs (fresh thyme leaves, tarragon and/or rosemary)2 cloves garlic, finely chopped4 lbs. roasting chicken1 cup water2 Tbsp. all-purpose flourm .

Directions oven to 375 Combine 1/2 tub Knorr® Homestyle Stock - Chicken, herbs and garlic in small bowl. Rub mixture under chicken skin, then spread remaining on outside of chicken. Arrange chicken on rack in roasting pan.

  • Roast chicken 2 hours or until meat thermometer inserted in thickest part of thigh reaches 165°. Remove chicken from pan and keep warm.

  • To make gravy, combine water with flour in small bowl, then stir into pan over medium heat. Stir in remaining 1/2 tub Stock, scraping up brown bits from bottom of pan. Cook, stirring frequently, until gravy is slightly thickened, about 5 minutes. Strain, if desired. Serve gravy with chicken. As side dish add green beans and 1 cup of rice. 

Great Granola Snacks

Oxtail Stew

I'ngredients

1 1/4 cups graham cracker crumbs 1/4 cup sugar1/3 cup butter (margarine melted) Tasty tip 20 ozs strawberries (frozen sweetened, thawed)1 tbsp cornstarch24 ozs cream cheese (softened)14 ozs sweetened condensed milk1/4 cup lemon juice 3 eggs1 tbsp water.

 

Directions:

 

  1. Combine graham cracker crumbs, sugar, cinnamon, and butter in a bowl. Press onto the bottom of an ungreased 9-inch springform pan. Refrigerate for 30 minutes.

  2. Preheat oven to 300 degrees F (150 degrees C).

  3. Place strawberries and cornstarch into a blender. Cover and puree until smooth. Pour strawberry sauce into a saucepan.

  4. Bring to a boil over high heat. Boil and stir until sauce is thick and shiny, about 2 minutes. Set aside 1/3 cup strawberry sauce; cool. Cover and refrigerate remaining sauce for serving.

  5. Beat cream cheese in a mixing bowl with an electric mixer until light and fluffy; gradually beat in condensed milk. Mix in lemon juice and vanilla extract, then beat in eggs on low speed until just combined. Pour half of cream cheese mixture over crust; drop half of reserved strawberry sauce by 1/2 teaspoonfuls on cream cheese layer. Carefully spoon remaining cream cheese mixture over sauce; drop remaining strawberry sauce by 1/2 teaspoonfuls on top. Cut through top layer only with a knife to swirl strawberry sauce.

  6. Bake in preheated oven until center is almost set, 45 to 50 minutes. Cool on a wire rack for 10 minutes. Carefully run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight. Serve reserved strawberry sauce with cheesecake. If the sauce it too thick, stir in water

Green Bean Snacks

Krispie Treats 

The basics of making Rice Krispies treats are simple. Here's how it goes:

 

  • Over low, low heat, melt the butter in a pot

  • Once it's melted, add the marshmallows

  • Still with low heat, stir the marshmallows until thoroughly melted and cook another minute

  • Turn off heat

  • Stir in cereal

  • Transfer to buttered pan

  • Cover with wax paper and press down

  • Let cool for 20 minutes and cut it up

If you've made Rice Krispies treats before, all of this should be familiar. I just want to emphasize the low heat. The flame should just tickle the bottom of the pan. Be patient, it still doesn't take that long.

Extra: For easy clean-up, just soak the pot in hot water and give it a few minutes
